Traditional New Mexico Soup- Posole

Posole, as we simply call it here in New Mexico. Posole is usually made during the cold winter months and often prepared with posolemenudo, which is tripe. Some people prefer it with menudo, some without. Posole is hominy and beef, or pork and spices simmered for hours. Side condiments commonly used are lemon or lime on the side squeezed in for flavor, raw chopped onions, cilantro, and red New Mexico chile.
